Chef Tim's Roasted Tomato Halves

Prostate cancer is the second most common cancer among men worldwide. Research studies suggest eating cooked tomatoes may play a significant role in reducing prostate cancer risk. Cooking tomatoes increases the bioavailability of lycopene, a bright red carotenoid, which is a powerful antioxidant. So in honor of June—Men's Health Month, Centra's head chef, Chef Tim Schoonmaker, produced an easy recipe featuring cooked tomatoes. Try this recipe in your own kitchen and share your results!

Serves 4

Cooked tomatoes contain a large amount of Lycopene which is linked to better overall prostate health.

Ingredients

  • 2 each, any type of tomato, halved

  • 1 tablespoon olive oil

  • ½ tablespoon balsamic vinegar

  • 1 clove garlic, chopped

  • Salt and pepper, to taste

Instructions

Preheat oven to 400 degrees.

  1. Wash tomatoes, remove the core, and cut in half. 

  2. Arrange on a sheet pan. 

  3. Add garlic, salt, and pepper to each tomato half

  4. Drizzle olive oil and vinegar on each half. 

  5. Place tomatoes in the oven for 10-15 minutes, or until the tomatoes start to brown. 

  6. Serve immediately.

Serving suggestions:

  • Serve as a side vegetable on any dish. 

  • Serve as a main entrée over fresh salad greens and fresh mozzarella cheese. 

  • Chill and serve with tuna or chicken salad.
